4 Crown pigeons
4 slices bacon
4 tablespoons butter
Pint cream (or evaporated milk)
A few black olives
Salt and pepper to taste

How To Cook: |
|
|
1. Cover the breast of each bird with a slice of bacon and season. Place 1 tablespoon butter inside each.
|
2. Roast in a hot 400-450°F oven for 30 minutes.
|
3. Remove birds, drain off surplus fat and add cream to the pan.
|
4. Simmer slowly and season to taste. Add olives, and pour over the birds.
