What You Need:            (To Serve: 2 - 3)

  • 2½ pounds chicken
  • ¼ cup oil
  • 1½ cups minced onions
  • ½ teaspoon powdered ginger
  • 1½ cups water
  • 1 tablespoon lime juice
  • 2 dozen small pitted olives
  • Salt, pepper

  • How To Cook:
    1. Cut chicken into pieces and brown on all sides in oil.

    2. Remove chicken and fry onions. Stir in ginger, salt and pepper and simmer 2 minutes.

    3. Add water, lime juice and chicken pieces.

    4. Simmer for 30 minutes. Add olives a few minutes before serving.
