2 pounds goat
1 pound irish potato
2 tablespoons curry powder
2 sliced onions
2 cups hot water
1 tablespoon lime juice
1 tablespoon butter
2 cloves garlic
1 stalk scallion
Salt, oil

How To Cook: |

|
1. Cut meat into bite-size pieces.
|
2. Season with curry powder, scallion, garlic, pepper and salt and set aside for at least one hour.
|
3. Remove seasoning from meat and set aside.
|
4. Brown meat in hot oil.
|
5. Add 2 cups of hot water and onions.
|
6. Cook slowly until tender, adding more water, butter, lime juice & curry powder if necessary, stirring to prevent burning.
|
7. Simmer until cooked (approximately 2 hours).
|
8. Serve with plain boiled rice and side dishes of nuts, grated coconut, mango chutney, sliced onions soaked in hot sauce and slices of fried ripe plantain.
