What You Need:            (To Serve: 4)

  • 1 4 pound duck
  • 1 tin pineapple slices
  • 2 tablespoons oil
  • 1 tablespoon rum
  • ½ cup water
  • 2 tablespoons sugar
  • A pinch of salt
  • 1 tablespoon light soy sauce

  • How To Cook:
    1. Clean and roast the duck. Cool, remove bones and slice. Drain pineapple slices and dice.

    2. Place duck and pineapple in alternate layers in a casserole dish.

    3. Add the pineapple juice mixed with oil, soya sauce, rum, water, sugar and salt.

    4. Bake in moderate oven for 1 hour. Serve with rice and green salad.
