How To Cook: |

1. Wash and peel guavas, cut in half and remove seeds. Dice the fruit and strain seeds through the sieve to remove juice and set aside.

2. Place the diced guava, sugar, cinnamon and allspice in a pot on low flame. Cook stirring gravy until tender; allow cooling.

3. Sift together the flour, salt and baking powder. Cut in the shortening with pastry blender or knife until the mixture resembles crumbs.

4. Pour in the milk; cooked guava; odd the egg and mix to a soft dough. Knead until smooth. Wrap dough easily in greased foil paper.

5. Wrap in additional foil to prevent water from entering it. Boil dough for ½ hour in a large pot half full of boiling water. Serve sliced duff with sauce.

SAUCE:
|
1. Reserve guava juice from seeds.
|
2. Cream butter and sugar together.
|
3. Add egg and juice from guava seeds.
|
4. Beat well; serve once over sliced duff.
