What You Need:
(To Serve: 2 - 3)

½ pound butter or margarine
2 small guinea hens cut into pieces (may be substitute by partridge, pheasant or turkey)
1 minced onion
1 tablespoon flour
1 cup water
3 chopped tomatoes
3 sweet potatoes, cubed
5 firm ripe plantains, sliced
Salt, pepper

How To Cook: |

|
1. Melt all but 3 tablespoons butter in a large pot or casserole.
|
2. Add the guinea hen pieces, onions, some salt and pepper and saute in some of the butter.
|
3. Sprinkle with flour and add water and tomatoes.
|
4. Cook over low heat for 25 minutes. Add sweet potato cubes and cook until tender. Season to taste.
|
5. Melt remaining butter and fry plantain slices.
|
6. Skim all fat from gravy and serve plantain slices separately.
