What You Need:            (To Serve: 4)

  • 3 pound chicken, clean and quartered
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon paprika
  • 4 tablespoon jerk sauce

  • How To Cook:
    1. Using a small knife, make two slits in each chicken quarter.

    2. Season with salt, pepper, paprika and jerk sauce.

    3. Cover and marinate in the refrigerator for at least 1 hour or even overnight.

    4. Preheat oven to 375°F and barbeque to 350°F.

    5. Place chicken in a roasting pan and cook in the oven for 30 minutes.

    6. Then transfer chicken to the barbeque and grill, turning chicken often, until it is cooked through.
