What You Need:

6 calapeeva (found in Jamaican rivers, or you can use any white fish)
1 cup breadcrumbs
Parsley, salt, pepper to taste
1 dessertspoon butter
2 sliced onions
1 tablespoon rum
1 tablespoon oil

How To Cook: |
|
|
1. Wash and clean fish with lime juice.
|
2. Make a stuffing of breadcrumbs, parsley, salt and pepper, moistened with a little melted butter.
|
3. Stuff the fish and place on a bed of sliced onions, which have been slightly sauteed in hot oil.
|
4. Add 1 tablespoon rum and cover with some breadcrumbs.
|
5. Bake in a moderate oven until fish are tender.
