1 cup cut-up cold, cooked green beans
3 medium-sized cold, cooked potatoes, peeled and quartered
2 large tomatoes, peeled and quartered
2 medium-sized green peppers, cleaned and cut into strips
6 flat anchovy fillets, chopped
12 pitted black olives
1 tablespoon drained capers
1/3 cup olive oil
3 tablespoons wine vinegar
½ teaspoon dried tarragon
2 tablespoons chopped fresh parsley

1. Place first five ingredients in a large bowl or serving dish.

2. Top with anchovies, olives, and capers.

3. Combine remaining ingredients and pour over salad.
