What You Need:            (To Serve: 4)

  • 2 to 3 small rounds pita bread
  • 1 small head leafy lettuce, washed, dried, torn into bite-size pieces, and chilled
  • 1 medium-sized cucumber, peeled and chopped
  • 8 scallions, cleaned and sliced
  • 1 cup chopped fresh parsley
  • 1 cup chopped fresh mint
  • 1/3 cup olive oil
  • Juice of 2 large lemons
  • 1 or 2 garlic cloves, crushed
  • Salt, pepper to taste

  • How To Cook:
    1. Break bread into small pieces and put in a salad bowl.

    2. Add lettuce, cucumber, scallions, parsley, and mint; mix well.

    3. Combine oil, lemon juice, garlic, salt, and pepper and pour over salad.

    4. Toss lightly and serve.
