What You Need:            (To Serve: 4)

  • 1 bunch fresh broccoli, about 1½ pounds
  • Salt
  • 2 cups shredded raw carrots
  • 2 large tomatoes, peeled and cut into wedges
  • 1/3 cup salad oil
  • 2 tablespoons fresh lemon juice
  • 2 hard-cooked eggs, shelled and chopped
  • Pepper to taste

  • How To Cook:
    1. Trim and discard outer leaves of broccoli.

    2. Split large stalks lengthwise, and then cut into 3-inch-Iong pieces.

    3. Cook in a little salted boiling water in a medium saucepan, covered, unlit just tender about 12 minutes.

    4. Drain; cool; and chill. Spoon into a serving dish.

    5. Top with shredded carrots and surround with tomato wedges.

    6. Combine remaining ingredients and spoon over broccoli.
