What You Need:            (To Serve: 4 - 6)

  • 3 cups diced cooked white meat of chicken
  • 2 cups cooked fresh or canned com, drained
  • 2 medium-sized green peppers, cleaned and chopped
  • 4 medium-sized tomatoes, peeled and chopped
  • 1 medium-sized cucumber, peeled and diced
  • 3 tablespoons chopped fresh coriander or parsley
  • Salt, pepper to taste
  • 2 cups mayonnaise or salad dressing
  • Crisp lettuce leaves, washed and dried
  • Paprika
  • 2 hard-cooked eggs, shelled and quartered
  • 12 radish roses

  • How To Cook:
    1. Combine first six ingredients in a medium bowl. Season with salt and pepper.

    2. Add 1 cup mayonnaise or salad dressing and mix well. Refrigerate 1 hour.

    3. When ready to serve, place lettuce loaves on a serving dish and top with chicken-com mixture shaping into a mound.

    4. Coat with remaining 1 cup mayonnaise or salad dressing.

    5. Sprinkle with paprika and garnish with eggs and radishes.
