This flavorful salad, called "ensalada campesina", or peasant salad, is a nourishing and inexpensive salad to serve with any kind of meat.

What You Need:

2 cups cooked or canned chick-peas, drained
2 medium-sized red onions, peeled and thinly sliced
½ pound Jack or Cheddar cheese, diced
1/3 cup olive or salad oil
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh coriander or parsley
Salt, pepper to taste
Crisp lettuce leaves, washed and dried
2 hard-cooked eggs, shelled and quartered

How To Cook: |

|
1. Combine chick-peas, onions, and cheese in a large bowl.
|
2. Mix oil, lemon juice, coriander or parsley, salt, and pepper; pour over salad; mix well.

3. Refrigerate 1 hour or longer to blend flavors.

4. Serve on lettuce leaves and garnish with egg quarters.
