It is a good winter dish to accompany any kind of meat or poultry.

What You Need:            (To Serve: 4 - 6)

  • 1 cup cooked fresh or canned corn, drained
  • 2 cups cooked or canned kidney beans, drained
  • 1 cup diced, peeled cucumber
  • 1 medium-sized onion, peeled and diced
  • 2 medium-sized tomatoes, peeled and chopped
  • 3 tablespoons olive or salad oil
  • 1 tablespoon cider vinegar
  • 2 tablespoons minced fresh parsley
  • Salt, pepper to taste
  • Crisp lettuce leaves, washed and dried

  • How To Cook:
    1. Combine all ingredients, except lettuce, in a medium bowl and refrigerate 2 to 3 hours to blend flavors.

    2. To serve, place lettuce leaves in a bowl and top with salad.
