6 large tomatoes, peeled and sliced
1 medium-sized cucumber, washed and thinly sliced
1 medium-sized green pepper, cleaned and cut into thin strips
1 medium-sized onion, peeled and chopped
2 garlic cloves, crushed
8 flat anchovy fillets, drained and chopped
12 pitted black olives
1/3 cup olive oil
½ teaspoon dried basil
¼ cup chopped fresh parsley
Salt, pepper to taste

How To Cook: |

1. Combine tomato and cucumber slices, pepper strips, chopped onions, and garlic in a serving dish.
|
2. Top with chopped anchovies and olives.
|
3. Combine remaining ingredients and pour over salad. Mix well.
