What You Need:
(To Make: about 1¼ cups)

1 small onion, peeled and minced
2 garlic cloves, minced or crushed
12 flat anchovies, with their oil
¼ teaspoon dried basil, thyme, and oregano
1/3 cup wine vinegar
2/3 cup olive oil
1 teaspoon Worcestershire sauce
Salt, pepper to taste

How To Cook: |
|
|
1. Put onion, garlic, anchovies and their oil, and herbs in a mortar or bowl and mash with a pestle or wooden spoon.
|
2. Add remaining ingredients and mix with a fork.
|
3. Taste before adding salt as anchovies will make the dressing salty.
