2 cups diced and seeded, peeled cucumbers
Salt
2 cups plain yogurt
2 garlic cloves, crushed
2 tablespoons olive oil
2 tablespoons wine vinegar
3 tablespoons chopped fresh mint or dill
White pepper to taste

How To Cook: |

|
1. Put diced cucumber in a colander and sprinkle with salt.
|
2. Allow to drain 30 minutes. Drain off all liquid and spoon cucumbers into a bowl.
|
3. Add remaining ingredients and mix well.
|
4. Refrigerate at least 1 hour before serving.
