The Israelis prepare a number of interesting salads with their luscious fruits, such as oranges and avocados. This one is especially yummy. The appealing visual harmony of oranges and red onions is a pleasant bonus.

What You Need:

1 quart bite-size romaine, washed, dried, and chilled
2 large navel oranges, peeled and sliced crosswise
1 large red onion, peeled, sliced, and separated into rings
4 to 5 tablespoons salad oil
2 to 3 tablespoons fresh lemon juice
¼ teaspoon sugar
Salt, pepper to taste
Fresh mint leaves (optional)

1. Put romaine in a salad bowl.
|
2. Top with orange slices and onion rings.
|
3. Combine oil, lemon juice, sugar, salt, and pepper; pour over salad and toss.
