This is a colorful layered salad that's perfect for a buffet or holiday meal.

What You Need:
(To Serve: 8 - 10)

1 can (11 ounces) mandarin orange segments
1 package (3 ounces) orange gelatin
2 cups boiling water
½ cup chopped celery
½ cup small-curd cottage cheese
1 cup sour cream or plain yogurt
1 package (10 ounces) frozen raspberries, thawed
1 package (3 ounces) raspberry gelatin

1. Drain orange segments, reserving ½ cup orange syrup. Put orange gelatin in a medium bowl; add 1 cup boiling water; stir to dissolve. Add reserved orange syrup; mix well.

2. Chill until partially set. Fold in orange segments, celery, cottage cheese, and ½ cup sour cream or yogurt. Turn into a 7-cup mold; chill until almost set.

3. Meanwhile, drain raspberries, reserving ½ cup syrup. Put raspberry gelatin into a bowl and pour 1 cup boiling water over it.

4. Stir to dissolve; add raspberry syrup; chill until mixture thickens slightly. Add raspberries and remaining ½ cup sour cream or yogurt.

5. Spoon over orange layer and chill several hours until firm.
