Hungarians are very fond of all kinds of peppers, both sweet and hot and of various colors. Their national spice is the world's best paprika, made with native red peppers. This is one of their many pepper dishes, and it can be made spicier with the addition of minced or ground red peppers, if desired. A good winter salad to serve with sausages or other meats.

What You Need:
(To Serve: 4)

4 large sweet red or green peppers
3 to 4 tablespoons salad oil
1 large onion, peeled and chopped
2 to 3 teaspoons paprika
2 tablespoons wine vinegar
½ cup sour cream
3 tablespoons chopped fresh dill or parsley
Salt, pepper to taste

How To Cook: |

|
1. Clean peppers and cut into strips.
|
2. Saute in heated oil in a medium skillet until just tender.
|
3. Remove with a slotted spoon to a serving dish.
|
4. Add onion to oil drippings and saute until tender.
|
5. Mix in paprika and cook 1 minute. Add to peppers.
|
6. Stir in remaining ingredients and mix well.
|
7. Allow to stand at room temperature to cool or refrigerate 1 hour before serving.
