In 1905, a Pennsylvania housewife won third prize in a Knox Gelatin contest with a recipe called "Perfection Salad". It's been a great American favorite ever since. Over the years it has appeared in many cookbooks in many variations. This version is adapted from the original recipe.

What You Need:
(To Serve: 4)

1 tablespoon unflavored gelatin
¼ cup cold water
1 cup boiling water
¼ cup sugar
½ teaspoon salt
1 tablespoon fresh lemon juice
¼ cup vinegar
½ cup finely chopped cabbage
3 tablespoons finely chopped pimiento

How To Cook: |

|
1. Soften gelatin in cold water in a medium bowl. Add boiling water; stir to dissolve.
|
2. Mix in sugar, salt, lemon juice, and vinegar. Chill until partially set.
|
3. Fold in remaining ingredients and turn into a 4-cup mold or 4 individual molds.
|
4. Chill several hours until firm. Unmold onto a chilled plate over salad greens, if desired.
|
5. Serve alone or with mayonnaise.
