This hearty salad is served in winter with meat dishes made with pork or veal.

What You Need:
(To Serve: 4 - 6)

4 medium-sized potatoes, washed
Salt
2 cups drained sauerkraut
1 medium-sized onion, peeled and chopped
¼ cup salad oil
2 tablespoons cider vinegar
½ teaspoon caraway seeds
2 teaspoons sugar
Pepper to taste
1 large carrot, scraped and grated

How To Cook: |

|
1. Cook potatoes in their jackets in a little salted boiling water until tender, about 25 minutes.
|
2. Peel and slice while still warm.
|
3. Combine with sauerkraut and onion in a large bowl.
|
4. Mix together oil, vinegar, caraway seeds, sugar, salt, and pepper.
|
5. Add to vegetable mixture and mix well.
|
6. Serve sprinkled with grated carrot.
