A good winter salad to serve with meat loaf or a roast.

What You Need:

3 cups shredded green cabbage
1 cup julienne-cut, peeled celery root or celeriac
1 cup grated raw carrots
1 medium-sized onion, peeled and chopped
2 medium-sized apples, cored and chopped
About 2/3 cup mayonnaise or salad dressing
2 tablespoons fresh lemon juice
1 teaspoon sugar
Salt, pepper to taste
2 tablespoons chopped fresh dill or parsley

1. Combine cabbage, celery root, carrots, onion, and apples in a medium bowl or serving dish.
|
2. Mix remaining ingredients, except dill or parsley, and combine with vegetables and apples.
