Many varieties of small salt water fish are called sardines. Although they're usually eaten as snacks, they can be used to make interesting salads.

What You Need:
(To Serve: 4)

Crisp lettuce leaves, washed and dried
2 cans (3¾ or 4 ounces each) sardines in oil, drained
1 medium-sized red onion, peeled, sliced, and separated into rings
1 medium-sized green pepper, cleaned and cut into strips
3 tablespoons salad oil
1 tablespoon cider vinegar or lemon juice
1 or 2 garlic cloves, crushed
2 teaspoons prepared mustard
1 teaspoon prepared horseradish
Salt, pepper to taste

1. Arrange lettuce leaves on a serving dish.
|
2. Place sardines, onion rings, and pepper strips over them.
|
3. Combine remaining ingredients; shake well; pour over salad.
|
4. Serve at once.
