This traditional Greek salad is made with a favorite delicacy, the roe of red mullet, which is caught in abundance in the Aegean Sea.

What You Need:
(To Serve: 8 - 10)

1 jar (8 ounces) red caviar or tarama
1 medium-sized onion, peeled and minced
Juice of 2 lemons
5 slices white bread, crusts removed
1 cup olive oil
3 tablespoons chopped fresh parsley

How To Cook: |

|
1. Combine caviar, onion, and lemon juice, and mix well, preferably in an electric blender.
|
2. Dip bread in hot water. Squeeze dry and break into small pieces. Add to caviar mixture and blend well.
|
3. Gradually add oil and blend until no trace of oil is left. Spoon onto a plate and shape as a mound.
|
4. Garnish with parsley. Serve with pieces of pita bread.
