This fruit salad from Thailand is not only unusual but has a fascinating name, Ma Ho, or galloping horses. It can be made with fresh pineapple as well as oranges.

What You Need:
(To Serve: 6)

2 garlic cloves, crushed
½ cup minced onions
2 tablespoons peanut or salad oil
½ cup minced or ground raw pork
2 tablespoons tamarind or lemon juice
2 teaspoons sugar
Pepper to taste
3 tablespoons finely chopped peanuts
6 thick navel orange slices
2 shredded red chilies
1/3 cup chopped fresh coriander or parsley

How To Cook: |
|
|
1. Saute garlic and onions in oil in a medium skillet until tender.
|
2. Add pork, tamarind or lemon juice, sugar, and pepper; cook about 15 minutes, or until pork is done.
|
3. Remove from heat; add peanuts and cool.
|
4. To serve, place a spoonful of the pork-peanut mixture over each orange slice and garnish the tops with chilies and coriander or parsley.
