A delightful dressing for fish, poultry, or vegetable salads.

What You Need:            (To Make: about 2½ cups)

  • 1½ cups plain yogurt
  • 1/3 cup olive or salad oil
  • 3 tablespoons vinegar or lemon juice
  • ½ cup finely chopped, peeled, seeded cucumbers
  • 2 tablespoons minced onion
  • 2 tablespoons chopped fresh dill, mint, or parsley
  • Salt, pepper to taste

  • How To Cook:
    1. Combine ingredients and mix well.

    2. Refrigerate 1 hour or longer to blend flavors.
