How To Cook: |

1. Make some flaky or puff pastry.

2. Peel, wash and core some cooking apples and cut each apple in half lengthwise.
|
3. Roll out the pastry to a thickness of ½ inch, and cut into squares, allowing one square to each half-apple.

4. Place the half-apples on the pastry, then, with a sharp knife, cut into thin slices. (Do not separate the slices, as they will open slightly during the cooking.)

5. Brush with apricot jam (first warming the jam a little, so that it will spread evenly).
|
6. Bake in a hot oven (450°F) for 30 - 35 minutes.
|
7. When the flans are ready, the apple will be cooked and the pastry golden brown and well risen round the edges.
|
8. Re-glaze with apricot jam.
