What You Need:
(To Make: 1 pie)

½ pound ricotta (according to size of pie)
Peas (tinned or cooked fresh)
Milk
Grated cheese
2 - 3 eggs
Puff or shortcrust pastry
Pepper and salt
Finely chopped parsley
Milk or egg to glaze

How To Cook: |

|
1. Mix the ricotta with some milk and add the beaten eggs, pepper, salt, parsley and peas.
|
2. Mix thoroughly, then top with grated cheese.
|
3. Line a greased casserole with pastry, fill with the ricotta mixture, and cover with a layer of pastry.
|
4. Decorate the top of the pie with the pastry trimmings.
|
5. Brush top of pie with milk or beaten egg and bake in a moderately hot oven (400°F) until the pie is a pale golden color.
