1. Make a thick bechamel sauce with the butter, flour, milk and salt.

2. Add the egg yolks, grated cheese and nutmeg and mix well.
|
3. Whisk the egg whites very stiffly and fold lightly into the mixture.
|
4. Pour into a buttered souffle dish and bake in a moderately hot oven (400°F) for 35-40 minutes.
|
5. Put on a plate covered with a napkin and serve at once.
