This essentially Russian sweet is very simple and can be made from any good fruit puree, orange, apricot, apple, red-currant, raspberry.

What You Need:
(To Serve: 2 - 4)

2 pound fruit (orange, apricot, apple, red-currant, raspberry, etc.)
3 oz sugar
2 tablespoons of potato flour or corn flour

How To Cook: |
|
|
1. To the puree from fruit add sugar.
|
2. Blend potato or corn flour with cold water, add to the puree and bring to the boil.
|
3. Cook gently for 2 minutes, stirring well.
|
4. Serve with cream.
|
5. When eaten hot the Keesiel is as thick as honey; when cold, like custard.
