What You Need:

2 pound potatoes
½ pound smoked bacon
Oil or fat for frying
Salt and pepper

How To Cook: |

|
1. Wash, peel and grate potatoes, then squeeze in cloth to make as dry as possible.
|
2. Heat a little oil or fat and lightly fry smoked streaky bacon, cut into thin fingers.
|
3. Add the potatoes, mix and cook over a low heat, stirring frequently.
|
4. Season with pepper and a very little salt.
