What You Need:            (To Serve: 2 - 4)

  • 1 pound calf's liver
  • ¾ pint milk
  • Salt and pepper
  • 1 tablespoon flour
  • 2 oz butter
  • 1 onion
  • ½ pint sour cream, or ¼ pint sour cream and ¼ pint water

  • How To Cook:
    1. Wash the liver and put it in a china bowl with enough milk to cover it and let it soak for 1 hour.

    2. Take out the liver, wipe it and cut into thin slices.

    3. Season with salt and pepper, dip into flour and fry in the hot butter on both sides.

    4. Put the liver in a casserole, fry the chopped onion and add it with the cream.

    5. Cover and simmer slowly for about 30 minutes.
