What You Need:            (To Serve: 4 - 6)

  • 2 pound asparagus
  • 1 oz butter
  • Salt and pepper
  • 1 oz flour
  • 2 pound new potatoes
  • A little cream

  • How To Cook:
    1. Wash and trim the asparagus, cut each stalk into 3 pieces and cook in salted water.

    2. Cook the unpeeled potatoes with a little salt, peel at once and cut into round slices about ¼ inch thick.

    3. Make a sauce with the butter, flour and asparagus liquor, season to taste and add a little cream.

    4. Mix with the vegetables and serve very hot.
