What You Need:

  • 1 carp (4 - 5 lb.)
  • 1½ oz butter
  • Salt
  • ½ pint creamy mushroom sauce
  • 1 oz flour

  • How To Cook:
    1. Clean the carp and scrape it well, especially along the back.

    2. Dry with a clean cloth, rub all over with a handful of salt and coat the fish with the flour.

    3. Melt the butter and lightly fry the fish, then put it in a moderately hot oven (400°F) to finish cooking-in all, about 25 minutes.

    4. Serve on a hot dish, the fish lying on its stomach to make it easier to help oneself from both sides.

    5. Pour the hot sauce over just before serving.
