This is a most popular dish in Malta. The savoury ingredients can be varied according to taste and availability; minced chicken or pork and fried aubergine or tomatoes can replace the livers and mushrooms; sheep's brains are sometimes included.

½ pound puff pastry
Fat for frying
1 pound macaroni
4 eggs
6 oz chopped chicken livers
Seasoning
Grated Parmesan cheese
6 oz mushrooms
Butter
2 large onions

How To Cook: |

1. Line a large pie dish with the pastry. Boil the macaroni, drain and add the chopped chicken livers.
|
2. Fry the mushrooms and onions and add with the well-beaten eggs to the macaroni mixture; season and pour into the lined pie dish.
|
3. Cover with grated Parmesan cheese and knobs of butter and bake in a hot oven (450°F) for 30 - 40 minutes, or until the top is well browned.

4. Serve with a good hot tomato sauce and if wished with grated Parmesan cheese.
