What You Need:

4 tablespoons water
1 teaspoon grated nutmeg
7 tablespoons honey
1 teaspoon ground ginger
9 oz sugar
1 pound flour
A pinch of salt
1 tablespoon baking powder
4 drops of lemon essence
6 oz almonds
2 teaspoons ground cinnamon
2 oz candied peel
1 teaspoon ground cloves
Glace icing

How To Cook: |

1. Mix the water, honey, sugar and salt in a saucepan, heat to dissolve the sugar and pour this thick syrup into an ovenproof glass dish; leave until tepid.
|
2. Stir in the lemon essence, spices and two-thirds of the mixed flour and baking powder and blend well.
|
3. Add the rest of the flour, then the shredded almonds and the diced candied peel.
|
4. Knead quickly to get a smooth dough, put this on a greased and floured baking tray, spreading it to a thickness of 1/8 - ¼ inch with a palette knife, and bake for about 25 minutes in a moderate oven (350°F).

5. Cut into squares and coat with glace icing.
