What You Need:
(To Serve: 6 - 8)

8 veal cutlets, 5 inches by 2½ inches by ¼ inch
¼ teaspoon pepper
1 tablespoon minced onion
3 tablespoons chopped parsley
¼ pound minced beef
3 tablespoons butter
¼ pound lean pork, minced
14-oz. can sliced mushrooms
2 tablespoons packaged dried breadcrumbs
½ pint sour cream
¼ cup cream
1 teaspoon sugar
1 egg
1 teaspoon piquant table sauce
1½ teaspoon salt

How To Cook: |
|
|
1. Trim fat from cutlets.
|
2. Mix the beef, pork, crumbs, cream, egg, 1 teaspoon salt, pepper, onion and parsley well together.
|
3. Then spoon 2 rounded tablespoonful of meat mixture on to one end of cutlet.
|
4. Roll each cutlet from filled end, skewer.
|
5. Heat the butter in the pan and brown veal well in it.
|
6. Add the undrained mushrooms, sour cream; simmer, covered, ¾ hour or till tender.
|
7. Remove skewers from rolls; arrange on heated platter.
|
8. Season gravy with ½ teaspoon salt, sugar, piquant sauce; pour over rolls and serve with mashed potatoes or fluffy rice.
