1½ pound young nettles
A few cooked sausages
1 pound spinach
2 tablespoons yoghourt or sour cream
1 pint rich bone stock

How To Cook: |
|
|
1. Blanch the nettles and mix them with the washed spinach.
|
2. Pour the boiling stock over them and simmer gently for 40 minutes, adding a little more stock if necessary.
|
3. Strain and serve with a garnish of small lengths of cooked sausage and add the yoghourt just before serving.
