4 cups mixed salad greens, washed, dried, torn into bite-size pieces, and chilled
1 cup fresh watercress leaves, washed, dried, and chilled
1 cup fresh mint leaves, washed, dried, and chilled
½ cup sliced scallions, with some tops
1/3 cup sesame or salad oil
2 to 3 tablespoons fresh lemon juice
Salt, pepper to taste
¼ cup diced Feta or farmer cheese
2 medium-sized tomatoes, peeled and cut into wedges

How To Cook: |

1. Combine greens, watercress, mint, and scallions in a salad bowl.
|
2. Mix oil, lemon juice, salt, and pepper; add to salad; toss.

3. Serve topped with cheese and garnished with tomatoes.
