In Korea a 'namool', or salad, made with well-seasoned vegetables is a traditional accompaniment for barbecued meat or grilled fish.

What You Need:
(To Serve: 4 - 6

1 pound fresh spinach leaves
¼ cup sliced scallions, with some tops
1 or 2 garlic gloves, crushed
½ teaspoon sugar
1 tablespoon soy sauce
1 tablespoon peanut or salad oil
Pepper to taste
2 teaspoons sesame seeds

How To Cook: |
|
|
1. Wash spinach and cut off any thick stems and wilted leaves.
|
2. Cook only in the water that remains on the leaves, covered, until just tender, about 5 minutes.
|
3. Drain well and cool. Chop and press out any liquid.
|
4. Combine with remaining ingredients, except sesame seeds, in a bowl.
|
5. Serve sprinkled with sesame seeds.
