This salad is from the Belgian city of Liege, long noted for its gaiety and superb gastronomy. Serve with pork, beef, or game.

What You Need:

¾ pound fresh green beans or 1 package (9 ounces) frozen green beans
Salt
4 medium-sized potatoes, washed
2 thin slices bacon or 1 small piece salt pork
1 large onion, peeled and chopped
¼ cup cider vinegar
Pepper to taste

How To Cook: |

|
1. Remove stems from fresh green beans and break into small pieces.
|
2. Cook in a little salted boiling water until just tender, about 15 minutes, and drain.
|
3. If frozen beans are used, cook according to package directions and drain.
|
4. Meanwhile, peel and cube potatoes.
|
5. Cook until tender in a little salted boiling water, about 12 minutes, and drain.
|
6. Chop bacon or dice pork and cook in a medium skillet to release fat and until bacon or pork is crisp.

7. Add onion and saute until tender. Mix in vinegar, cooked beans, and potatoes.
|
8. Season with salt and pepper. Leave over medium heat until hot. Serve at once.
