What You Need:            (To Serve: 4)

  • 1 can or jar (8½ ounces) artichoke hearts, drained
  • 1 pound shelled, cooked medium-sized shrimp
  • 3 cubed, peeled, cold, boiled potatoes
  • 4 hard-cooked eggs, shelled and sliced
  • 2 tablespoons capers
  • 8 chrysanthemums, washed and dried
  • 1/3 cup saffron-flavored French dressing

  • How To Cook:
    1. Combine first five ingredients in a medium bowl.

    2. Chop 4 chrysanthemums and add to artichoke mixture.

    3. Add dressing; mix well.

    4. Serve topped with 4 whole chrysanthemums.
