What You Need:

1 pound salted dried codfish
1 medium-sized onion, peeled and chopped
1 medium-sized green pepper, cleaned and chopped
2 medium-sized tomatoes, peeled and chopped
1 or 2 garlic cloves, crushed
1/3 cup salad oil
3 tablespoons wine vinegar
Dash of cayenne or ¼ teaspoon ground red pepper
Salt, pepper to taste
3 tablespoons chopped fresh coriander or parsley

How To Cook: |
|
|
1. Put codfish in a medium bowl. Cover with cold water and let soak at least 4 hours.
|
2. Drain thoroughly. Remove any skin and bones and shred or cut into bite-size pieces.
|
3. Combine with remaining ingredients, except coriander, in a serving dish.
|
4. Refrigerate or leave at room temperature 2 hours to blend flavors.
|
5. Serve garnished with coriander or parsley.
