Austria's classic salad is 'Gurkensalat', cucumber salad, which is prepared in several variations. This is a basic recipe. Vinegar may be replaced with lemon juice. Omit sugar, if desired. Add garlic; garnish with paprika; or add sour cream. In Austria, this salad is served with schnitzels or other veal dishes, pork, and poultry.

2 medium-sized cucumbers
Salt
3 tablespoons white vinegar
3 tablespoons salad oil
1 teaspoon sugar
Freshly ground white pepper
2 tablespoons minced chives, fresh dill, or parsley

1. Peel cucumbers, cut off ends, score lengthwise with a fork, and slice thinly.
|
2. Put in a colander and sprinkle with salt. Allow to stand 30 minutes.
|
3. Turn into a serving dish. Add Vinegar, oil, and sugar.

4. Season with salt and pepper. Refrigerate 2 hours.

5. Serve garnished with chives, dill, or parsley.
