1 medium-sized onion, peeled and diced
2 tablespoons sweet relish
2 hard-cooked eggs, shelled and chopped
1medium-sized apple, cored and diced
¼ cup salad oil
2 tablespoons wine vinegar
1½ tablespoons chopped fresh dill or ½ teaspoon dried dill weed
Salt, pepper to last,
Crisp lettuce leaves, washed and dried
About ¾ cup mayonnaise
1 medium-sized tomato, peeled and sliced
3 tablespoons chopped fresh parsley

How To Cook: |

1. Combine meat, potatoes, peas, onion, relish, eggs, and apple in a large bowl.
|
2. Mix oil, vinegar, dill, salt, and pepper.
|
3. Add to meat-vegetable mixture and refrigerate 2 hours to blend flavors.
|
4. When ready to serve, arrange lettuce leaves on a serving dish.
|
5. Top with salad, shaping into a mound.
|
6. Cover with a thin coating of mayonnaise.
|
7. Garnish with tomatoes and parsley.
