What You Need:            (To Serve: 4)

  • 3 large ripe tomatoes, peeled and thickly sliced
  • 2 to 3 tablespoons olive oil
  • ¼ cup sliced scallions, with some tops
  • 3 tablespoons chopped fresh parsley
  • ½ teaspoon dried basil
  • 1 or 2 garlic cloves, crushed (optional)
  • Salt, pepper to taste
  • 1 large green pepper, cleaned and cut into slivers

  • How To Cook:
    1. Arrange tomato slices on a plate.

    2. Sprinkle with oil, scallions, parsley, basil, and garlic.

    3. Season with salt and pepper.

    4. Garnish with pepper slivers. Serve at once.
