This is a very attractive salad that can be made with a diverse selection of ingredients. Add also sliced hot peppers, watercress, sliced cooked beets, cubed cooked potatoes, and diced avocados, if desired.

What You Need:
(To Serve: 6 - 8)

1 medium-sized head romaine, washed, dried, torn into bite-size pieces, and chilled
About 1/3 cup olive oil
1 medium-sized cucumber, peeled and thinly sliced
2 medium-sized green peppers, cleaned and cut into slivers
1 cup sliced red radishes
3 tablespoons fresh lemon juice
½ teaspoon dried oregano
Salt, pepper to taste
½ cup diced Feta or farmer cheese
8 pitted black olives
2 large tomatoes, peeled and cut into wedges

How To Cook: |

|
1. Put romaine pieces in a salad bowl.
|
2. Add 2 tablespoons oil and toss lightly to coat romaine.
|
3. Add cucumber, green peppers, and radishes; toss.
|
4. Combine remaining oil, lemon juice, oregano, salt, and pepper; toss.
|
5. Serve at once garnished with cheese, olives, and tomatoes.
