What You Need:            (To Serve: 4)

  • 1 pound cold, shelled, cooked medium shrimp
  • 1 cup diced celery
  • 3 tablespoons minced onion
  • 3 tablespoons minced sweet pickles
  • 1/3 cup mayonnaise
  • Salt, pepper to taste
  • Crisp lettuce leaves, washed and dried
  • 3 tomatoes, peeled and cut into wedges

  • How To Cook:
    1. Combine first five ingredients in a medium bowl.

    2. Season with salt and pepper.

    3. Refrigerate 1 to 2 hours to blend flavors.

    4. To serve, place lettuce leaves on a platter and spoon salad over them.

    5. Surround with tomato wedges.
