What You Need:            (To Serve: 4 - 6)

  • 1 can (14 ounces) hearts of palm, drained and cut into ¼-inch slices
  • 1 medium-sized ripe avocado, peeled and diced
  • 1 small head leafy lettuce, washed, dried, torn into bite-size pieces, and chilled
  • 1/3 cup olive oil
  • 2 to 3 tablespoons fresh lemon juice
  • ½ teaspoon dried basil
  • Salt, pepper to taste
  • 1 large tomato, peeled and cut into wedges

  • How To Cook:
    1. Combine hearts of palm, avocado, and lettuce in a salad bowl.

    2. Mix oil, lemon juice, basil, salt, and pepper; pour over salad; toss.

    3. Serve at once garnished with tomatoes.
